- 4 boneless, skinless chicken breasts
- 1 cup diced jalapeno peppers (seeds removed for less heat)
- 1 cup softened cream cheese
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- 1 tbsp olive oil

Instructions
1. Preheat the Oven
- Preheat your oven to 375°F (190°C).
2. Prepare the Filling
- In a mixing bowl, combine the softened cream cheese, diced jalapenos, shredded cheddar cheese, sour cream, garlic powder, onion powder, smoked paprika (if using), and salt and pepper.
- Mix well until everything is evenly incorporated.
3. Stuff the Chicken
- Use a sharp knife to create a pocket in each chicken breast.
- Stuff each pocket generously with the jalapeno cheese mixture, ensuring it is fully packed.
4. Sear the Chicken
- Heat the olive oil over medium-high heat in an oven-safe skillet.
- Season the outside of the chicken breasts with salt and pepper.
- Sear the stuffed chicken breasts for about 3-4 minutes on each side, until golden brown.
5. Bake the Chicken
- Transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C).
6. Serve
- Remove the chicken from the oven and let it rest for a few minutes.
- Garnish with fresh cilantro or parsley if desired.
