- In a large mixing bowl, beat the eggs and granulated sugar together until thick and pale. This will take about 5 minutes.
- Sift in the flour, cocoa powder, baking powder, and salt.
- Gently fold the dry ingredients into the egg mixture, being careful not to deflate the batter.
3οΈβ£ Bake the Cake:
- Pour the batter into the prepared pan and spread it out evenly.
- Bake for 12-15 minutes, or until the cake springs back when touched.

4οΈβ£ Roll the Cake:

- Carefully peel off the parchment paper.
- Roll the cake and towel together from the short end. Let it cool completely while rolled.
5οΈβ£ Prepare the Filling:
- In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- If using cherry liqueur, brush it over the cooled cake for added flavor.
6οΈβ£ Assemble the Roll:
- Unroll the cooled cake and remove the towel.
- Spread the whipped cream evenly over the cake, leaving a small border around the edges.
- Scatter the drained cherries over the whipped cream.
7οΈβ£ Roll and Garnish:
- Carefully roll up the cake without the towel, starting from one end.
- Place the roll seam side down on a serving platter.
