Ingredients
- 2 ½ pounds boneless, skinless chicken thighs (about 8 pieces)
- 3 tablespoons freshly squeezed lemon juice (about 1 large lemon)
- 3 tablespoons olive oil
- 2 teaspoons lemon zest
- 1 tablespoon chopped fresh rosemary (or 1 teaspoon dried rosemary)
- 3 garlic cloves, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- Optional: a pinch of crushed red pepper flakes for heat
Ingredient Notes and Substitutions
- Chicken thighs: Boneless, skinless thighs are preferred for ease of grilling and quicker cooking, but you can use bone-in thighs—just increase cook time slightly.
- Lemon juice: Freshly squeezed juice adds brightness; avoid bottled lemon juice which can taste artificial.
- Rosemary: Fresh rosemary adds the best flavor, but dried works if you don’t have fresh—just reduce the amount by one-third.
- Olive oil: Helps the marinade coat the chicken evenly and adds richness.
Instructions
1. Prepare the Marinade
-
In a large bowl, whisk together lemon juice, olive oil, lemon zest, rosemary, garlic, salt, and pepper.
-
If you want a slight kick, add a pinch of crushed red pepper flakes.
2. Marinate the Chicken
-
Add chicken thighs to the bowl and toss to coat evenly.
-
Cover and refrigerate for at least 1 hour, up to 8 hours for maximum flavor.
-
If short on time, 30 minutes will still add decent flavor, though longer is better.
3. Preheat the Grill
-
Preheat your grill to medium-high heat (around 400°F or 200°C).
-
Oil the grill grates lightly to prevent sticking.
4. Grill the Chicken
-
Remove chicken from the marinade and let excess drip off.
-
Place on the hot grill and cook for 5 to 7 minutes per side, depending on thickness.
-
Flip once, and avoid moving it around too much to develop a good sear.
5. Check for Doneness
-
Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
-
If you don’t have a thermometer, cut into the thickest part—there should be no pink and the juices should run clear.
6. Rest and Serve
-
Let the grilled chicken rest for 5 minutes before slicing or serving. This keeps it juicy and allows the flavors to settle.
Notes
1. Use a Resealable Bag for Marinating
-
A large zip-top bag helps coat the chicken more evenly and saves cleanup.
2. Don’t Skip the Lemon Zest
-
It adds depth that lemon juice alone doesn’t provide. Use a fine grater or microplane to zest.
3. Marinate Ahead
-
Marinate the night before if you’re short on time during the week. It keeps well in the fridge.
4. Avoid Overcrowding the Grill
-
Leave space between pieces so heat circulates evenly and the chicken browns properly.
5. Don’t Press the Chicken While Grilling
-
Pressing forces juices out and can dry out the meat.
6. Adjust Seasoning After Cooking
-
Taste a piece and sprinkle with a bit of sea salt or an extra squeeze of lemon for a finishing touch if needed.
