Instructions
1. Preheat the Oven
Set your oven to 350°F (175°C). This step ensures that once the mac and cheese is assembled, it can go straight into a preheated oven, reducing wait time.
2. Cook the Pasta
Bring a pot of salted water to a rolling boil. Add the macaroni and cook according to the package instructions until al dente. Al dente means the pasta is tender but still has a slight bite to it, which prevents it from becoming too soft after baking. Once cooked, drain the pasta and set it aside.
3. Prepare the Cheese Sauce
In a medium saucepan, melt the butter over medium heat. Once melted, add the flour and stir continuously for about one minute. This creates a roux, which helps thicken the sauce. The mixture should become slightly golden and smell slightly nutty.
Gradually whisk in the warm milk, making sure to pour slowly to avoid lumps. Stir continuously until the mixture becomes smooth and starts to thicken. This process usually takes about three to five minutes.
Once the sauce has thickened, reduce the heat to low and add the shredded cheddar cheese. Stir until the cheese is completely melted and the sauce is creamy. Season with salt and black pepper. If using additional spices such as garlic powder or paprika, add them at this stage.
4. Combine Pasta and Cheese Sauce
Transfer the drained macaroni to a large mixing bowl and pour the cheese sauce over it. Stir until the pasta is well coated, ensuring that every piece is enveloped in the creamy sauce. If adding cooked chicken, ground beef, or vegetables, mix them in at this point.
5. Transfer to a Baking Dish
Grease a baking dish lightly with butter or cooking spray. Pour the mac and cheese mixture into the dish, spreading it evenly.
6. Bake Until Golden and Bubbly
Place the baking dish in the preheated oven and bake for about 20 minutes, or until the top is golden and the sauce is bubbling around the edges. Baking is optional but helps develop a slightly crisp top while keeping the inside creamy.
Notes
- Preventing a Grainy Sauce – Cheese can sometimes become grainy if added to a sauce that is too hot. Lower the heat before adding the cheese and stir gently until melted.
- Avoiding Overcooked Pasta – Since the pasta continues to cook in the oven, slightly undercook it during the boiling stage to maintain texture.
- Adjusting Sauce Consistency – If the sauce is too thick, add a small splash of warm milk and stir until it reaches the desired consistency. If too thin, let it cook for an extra minute before adding the cheese.
- Reheating Leftovers – Mac and cheese tends to thicken as it cools. When reheating, add a splash of milk and stir to restore creaminess.
