Ingredients
Dry Ingredients:
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar or coconut sugar
- ½ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
Wet Ingredients:
- 1 cup unsweetened almond milk (or any non-dairy milk)
- 1 tablespoon apple cider vinegar
- ½ cup vegetable oil or melted coconut oil
- 2 teaspoons pure vanilla extract
- ¾ cup hot water or brewed coffee for enhanced chocolate depth
Optional Add-Ins and Toppings:
- Vegan chocolate chips for extra richness
- Chopped walnuts or almonds for added texture
- Vegan frosting or ganache for layering
Preparation Tips:
- Preheat your oven to 350°F (175°C)
- Grease a 9-inch round or square cake pan, or line it with parchment paper
- Sift the dry ingredients together to avoid clumps and ensure even distribution
- Mix wet ingredients separately to allow proper emulsification before combining with dry
Instructions
- In a large mixing bowl, combine all the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well blended
- In a separate bowl, mix the almond milk and apple cider vinegar. Let sit for 5 minutes to curdle slightly, mimicking buttermilk
- Add oil and vanilla extract to the milk-vinegar mixture. Stir until incorporated
- Slowly pour the wet ingredients into the dry ingredients. Use a spatula or whisk to mix gently until you get a smooth, thick batter
- Gradually stir in the hot water or brewed coffee. The batter will become thinner and glossier, which is a good sign
- If using, fold in chocolate chips or nuts at this stage
- Pour the batter into your prepared cake pan. Smooth the top with a spatula
- Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely
- Once fully cooled, frost as desired or serve plain with a dusting of cocoa powder
Notes
- Always measure your ingredients accurately using standard measuring cups and spoons
- Sifting cocoa powder is especially important to avoid dry clumps in the batter
- Use room temperature ingredients to ensure even mixing and proper baking
- Coffee doesn’t add a coffee flavor—it enhances the chocolate taste, but hot water works fine too
- Don’t overmix the batter once you add liquid; mix just until combined to avoid a dense texture
- Check the cake at the 30-minute mark to prevent overbaking
- Letting the cake cool completely before frosting ensures the icing won’t melt or slide off
- Store leftovers covered at room temperature for 2 to 3 days or refrigerate for longer shelf life
