- 3 cups mini marshmallows – Creates a light, fluffy texture. For a healthier twist, use mini yogurt-covered raisins instead.
- 1 1/3 cups heavy cream – Used to make fresh whipped cream.
- 3 tablespoons sugar – Enhances the sweetness. This can be adjusted based on taste.
- 1/4 cup sour cream – Balances the sweetness with a slight tang. Greek yogurt can be used as a healthier alternative.
Optional Ingredients:
- 1 cup green grapes, halved – Adds a juicy crunch.
- 1/2 cup chopped pecans – Provides a nutty texture. You can substitute with almonds or walnuts.
- 1/2 cup shredded cooked chicken or beef strips – If you prefer a bit of protein, adding a small amount of cooked, shredded chicken or thinly sliced beef can make this a more filling dish without altering its classic taste.
Instructions
Step 1: Prepare the Whipped Cream
- In a large mixing bowl, add the heavy cream and sugar.
- Using a hand mixer or whisk, whip until soft peaks form. This means the cream will hold its shape but still be slightly soft when lifted with a spoon.
- Gently fold in the sour cream until fully combined. If you prefer a sweeter salad, add more sugar to taste.
Tip: If you want to save time, you can use store-bought whipped topping, but making fresh whipped cream enhances the flavor.
Step 2: Prepare the Fruit
- If using fresh pineapple, peel, core, and cut it into small bite-sized pieces.
- Drain the canned mandarin oranges and maraschino cherries thoroughly to prevent excess liquid from making the salad runny.
- If using grapes, wash and cut them in half.
Step 3: Assemble the Salad
- In a large mixing bowl, combine the pineapple, mandarin oranges, cherries, coconut, and marshmallows.
- Carefully fold in the whipped cream mixture until all ingredients are evenly coated.
- If using pecans or additional fruits, gently stir them in at this stage.
Step 4: Chill and Serve
- Cover the bowl with plastic wrap or a lid.
- Refrigerate for at least 2 hours to allow the flavors to blend.

Notes
- Drain the Fruit Well – Excess liquid can make the salad watery. Let canned fruits sit in a strainer for a few minutes before mixing.
- Use Cold Heavy Cream – Cold cream whips better and holds its shape longer. Chill the mixing bowl beforehand for best results.
- Fold, Don’t Stir – Stirring too aggressively can break down the fruit and make the salad mushy. Use a gentle folding motion.
