Instructions

1. Prepare the Graham Cracker Crust

Start by combining the crushed graham crackers and melted butter in a small mixing bowl. Stir until the mixture resembles damp sand. Divide the crust mixture evenly among six jars or dessert bowls, pressing it down firmly to form the base layer.

2. Whip the Pumpkin Cheesecake Filling

In a mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the brown sugar, cinnamon, nutmeg, and cloves, ensuring the spices are evenly distributed. Pour in 1 tablespoon of vanilla extract and 1 tablespoon of caramel sauce, mixing until combined. Fold in the pumpkin puree until the filling is smooth and luscious.

3. Make the Whipped Cream

Using a stand mixer or hand mixer, beat the heavy cream, white sugar, remaining vanilla, and 1 tablespoon of caramel sauce until stiff peaks form. Be careful not to overwhip.

4. Combine and Layer

Fold half of the whipped cream into the pumpkin cheesecake mixture, creating a light and airy consistency. Spoon or pipe this mixture over the graham cracker crusts. Top each parfait with the remaining whipped cream, piping it for a polished look if desired.
