Ingredients
For the Graham Cracker Crust:
- 10 graham crackers, crushed
- 4 tablespoons melted butter
For the Pumpkin Cheesecake Layer:
- 8 oz cream cheese, softened
- ½ cup brown sugar
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 14 oz canned pumpkin puree
- 1 tablespoon vanilla extract
- 1 tablespoon caramel sauce
For the Whipped Cream:
- 2 cups heavy cream
- 3 tablespoons white sugar
- 1 tablespoon vanilla extract
- 1 tablespoon caramel sauce
For the Topping:
- 3 tablespoons caramel sauce
- ½ tablespoon coarse sea salt
Instructions
Start by combining the crushed graham crackers and melted butter in a small mixing bowl. Stir until the mixture resembles damp sand. Divide the crust mixture evenly among six jars or dessert bowls, pressing it down firmly to form the base layer.
In a mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the brown sugar, cinnamon, nutmeg, and cloves, ensuring the spices are evenly distributed. Pour in 1 tablespoon of vanilla extract and 1 tablespoon of caramel sauce, mixing until combined. Fold in the pumpkin puree until the filling is smooth and luscious.
Using a stand mixer or hand mixer, beat the heavy cream, white sugar, remaining vanilla, and 1 tablespoon of caramel sauce until stiff peaks form. Be careful not to overwhip.
Fold half of the whipped cream into the pumpkin cheesecake mixture, creating a light and airy consistency. Spoon or pipe this mixture over the graham cracker crusts. Top each parfait with the remaining whipped cream, piping it for a polished look if desired.
Drizzle each parfait with the remaining caramel sauce and sprinkle with a pinch of coarse sea salt. These finishing touches elevate the dessert with a balance of sweet and salty.
Notes
- No Graham Crackers? Use crushed digestive biscuits, ginger snaps, or even Oreo crumbs for a unique twist.
- Pumpkin Alternatives: Substitute sweet potato puree or butternut squash for a different flavor profile.
- Dairy-Free Option: Use coconut cream for the whipped topping and a dairy-free cream cheese alternative for the filling.
- Spice It Up: Add a pinch of cardamom or a dash of allspice for an extra layer of warmth.
- Prep Time: 20 minutes
