Ingredients
For the toast:
- 2 large eggs

Instructions
Step 1: Prepare the Egg Mixture
In a wide bowl, whisk together the red onion, green chili, turmeric, salt, cilantro, and milk (or water). The bowl should be large enough to fit a slice of bread. Once the ingredients are well combined, crack the eggs into the mixture and whisk for about a minute until everything is fully incorporated.
Step 2: Soak the Bread
Dip one slice of bread into the egg mixture, pressing it down gently with a fork to help it absorb the liquid. Flip the bread over and repeat on the other side. The goal is to ensure that the bread is evenly coated but not overly soaked, as this can make it difficult to handle.
Step 3: Cook the Toast
Heat a nonstick or cast-iron pan over medium heat and add ½ teaspoon of oil. Carefully place the soaked bread onto the pan. Using a spoon, spread any leftover onions from the egg mixture onto the top of the bread. Cook for about a minute, or until the bottom turns golden brown.
Step 4: Flip and Cook the Other Side
Gently flip the toast over and cook for another minute, allowing the other side to turn golden brown. If needed, add a little more oil to prevent sticking. The toast should have a crispy texture on the outside while remaining soft inside.
Step 5: Repeat for the Second Slice
Repeat the process with the second slice of bread, ensuring that each side is evenly cooked.
Step 6: Serve Immediately
Masala French Toast is best served hot. Pair it with ketchup, green chutney, or sriracha sauce for an added layer of flavor.

- Use Fresh Bread for Better Texture: While slightly stale bread is often recommended for traditional French toast, fresh bread works better for this savory version as it absorbs the egg mixture more evenly.
- Adjust Spice Levels to Your Taste: If you are new to spicy foods, start with a smaller amount of green chili or remove the seeds to reduce heat.
- Don’t Over-Soak the Bread: If the bread absorbs too much of the egg mixture, it may become too soft and difficult to handle. A quick dip on each side is enough.
