- 1 cup white chocolate chips (180 g)
- 1/4 cup butter (60 g)
- 1 big pinch salt
- 2 tbsp lemon zest (from 2 lemons)
- 3 tbsp heavy whipping cream
- 1 tsp vanilla paste or extract (optional)
- 2-3 drops yellow food coloring (optional)
- 1/4 cup powdered sugar (for rolling)
- A couple of drops lemon extract
Instructions
- Prepare the White Chocolate Base
- Place the white chocolate chips in a medium mixing bowl. This will serve as the base for your truffle mixture.
- Infuse the Cream Mixture
- In a small saucepan, melt the butter over low heat.
- Add a big pinch of salt and the freshly grated lemon zest. Stir to release the lemon’s aromatic oils.
- Pour in the heavy whipping cream and gently heat until the mixture is almost boiling. The mixture should be steaming but not bubbling vigorously.
- Combine and Blend
- Strain the hot cream mixture through a fine-mesh sieve directly onto the white chocolate chips. This removes the zest, leaving behind a smooth infusion.
- Add the vanilla paste or extract, and if desired, incorporate the yellow food coloring for a pop of cheerful color. Stir thoroughly until the mixture is completely smooth and glossy.
- Chill the Mixture
- Cover the bowl with plastic wrap and refrigerate until the mixture firms up enough to handle. This typically takes 30 minutes to 1 hour.
- Shape the Truffles
- Using a teaspoon, scoop out small portions of the chilled mixture.
- Roll them between your palms to form smooth, round balls.
- Coat the Truffles
- Roll each truffle in powdered sugar for a light, sweet coating.
- For an extra layer of elegance, consider additional coating options like shredded coconut or finely chopped nuts.
- Set and Serve
- Return the truffles to the refrigerator for at least 30 minutes to set.
- Serve chilled or at room temperature, depending on your preference.
Notes
- Use high-quality white chocolate. If you enjoy the taste of the chocolate on its own, it will shine in the truffles. Chocolate bars or melts work as well as chips.
- Opt for heavy cream with at least 35% fat content. This ensures a smooth texture and proper setting of the truffle mixture.
- If the mixture seems too soft to roll, don’t rush. Chill it longer in the refrigerator or transfer to the freezer for 15–30 minutes.
- Enhance the flavor with food-grade essential oils like rosemary, lavender, or orange. Add just 1–2 drops to avoid overpowering the truffles.
