- 2 (8-ounce) packages refrigerated crescent roll dough – This forms the top and bottom layers of the bars. If you cannot find crescent roll sheets, regular crescent rolls can be used—just pinch the seams together.
- 2 lemons, zested and juiced – Fresh lemon juice and zest add a bright citrus flavor. Avoid bottled lemon juice, as it lacks the same vibrant taste.
- 2 (8-ounce) packages cream cheese, softened – The key to a smooth filling. Let it sit at room temperature for about 30 minutes before using.
- ½ cup white sugar – Sweetens the cream cheese mixture.
- 2 tablespoons butter, melted – Adds richness and helps create a golden, slightly crisp topping.
- 3 tablespoons white sugar – Used for sprinkling over the top layer for extra sweetness and texture.
Instructions
Step 1: Prepare the Baking Dish
Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with aluminum foil and lightly coat it with cooking spray. This step ensures easy removal and prevents sticking.
Step 2: Create the Bottom Layer
Unroll one package of crescent roll dough and press it into the bottom of the prepared baking dish. Stretch it to the edges and press any seams together to form a solid layer.
Tip: If the dough resists stretching, let it sit at room temperature for a few minutes to soften.
Step 3: Prepare the Filling
In a large mixing bowl, combine the lemon juice, ¾ of the lemon zest, softened cream cheese, and ½ cup of sugar. Use an electric mixer to beat the mixture until smooth and creamy. Spread this evenly over the bottom layer of dough.
Beginner Note: If the cream cheese mixture looks lumpy, it may be too cold. Allow it to soften a bit longer and mix again.
Step 4: Add the Top Layer
Unroll the second package of crescent roll dough and place it over the cream cheese mixture. Gently stretch it to cover the filling completely.
Step 5: Apply the Topping
Brush the melted butter evenly over the top layer. In a small bowl, mix the remaining lemon zest with 3 tablespoons of sugar, then sprinkle it over the buttered surface.
Why This Works: The butter helps the sugar and zest stick, creating a slightly caramelized, golden topping after baking.
Step 6: Bake
Place the baking dish in the preheated oven and bake for about 30 minutes, or until the top is golden brown.
How to Tell It’s Done: The crust should be firm and slightly crisp, with a beautiful golden color. If it still looks pale, bake for an additional 3-5 minutes.
Step 7: Cool and Chill
Allow the bars to cool at room temperature for about 20 minutes. Then, using the foil lining, carefully lift them out of the dish and place them on a cutting board. Cut into squares but leave them on the foil. Transfer the cut bars back into the baking dish and refrigerate for at least 1 hour before serving.
Why Chill? This step allows the filling to set, making the bars easier to cut and enhancing their flavor.
Notes
- Dough Tearing: If the crescent roll dough tears, simply press the pieces together with your fingers.
- Lumpy Cream Cheese: Softening cream cheese properly prevents lumps. If needed, microwave it for 10-15 seconds to speed up the process.
- Overbaking: Keep an eye on the bars towards the end of baking. If they brown too quickly, loosely cover with foil.
- Storage: Store leftover bars in an airtight container in the refrigerator for up to 4 days.
