Instructions
- Prepare the Crispy Garlic
Heat one tablespoon of vegetable oil in a large pan or wok over medium heat. Add the minced garlic and cook, stirring frequently, until it turns golden brown and crispy. Be careful not to burn it, as burnt garlic becomes bitter. Remove the garlic from the pan and set aside. - Cook the Chicken or Beef
In the same pan, increase the heat to medium-high and add another tablespoon of vegetable oil. Add the diced chicken or beef, season with salt and black pepper, and let it sear without stirring for a minute or two to develop a crispy, golden-brown crust. Stir and cook until fully cooked through, about 5-7 minutes for chicken and 3-5 minutes for beef. Remove from the pan and set aside. - Scramble the Eggs
Lower the heat to medium. Push any remaining bits of meat to the side and pour in the beaten eggs. Let them cook undisturbed for a few seconds, then gently stir to scramble. Once fully cooked, mix them with any remaining bits in the pan. - Stir-Fry the Vegetables
Add the mixed vegetables to the pan. Cook for 2-3 minutes until they become slightly tender but still have a bit of crunch. - Add the Rice and Sauce
Increase the heat to high. Add the cold, cooked rice to the pan, breaking up any clumps with a spatula. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir well to evenly coat the rice in the sauce. - Combine Everything
Return the cooked chicken or beef to the pan and stir well to incorporate all ingredients. Continue to cook for another 2-3 minutes, allowing the rice to slightly crisp at the bottom for added texture. - Finish with Green Onions and Crispy Garlic
Turn off the heat and mix in the chopped green onions. Sprinkle the crispy garlic on top just before serving for maximum crunch and flavor.
