- One 10-ounce box of frozen chopped spinach, thawed and squeezed dry
Lasagna Assembly
- Twelve lasagna noodles, cooked two minutes less than al dente according to package instructions
- One eight-ounce package shredded mozzarella cheese
- One-quarter cup grated Parmesan cheese
Instructions
Step 1: Prepare the Sauce
Begin by making the healthy turkey bolognese. This can be done ahead of time to save effort during the lasagna assembly. If preparing fresh, brown the ground turkey in a large skillet over medium heat. Add diced onions, garlic, and any additional seasonings. Stir in crushed tomatoes and allow the sauce to simmer for at least 20 minutes to develop flavor. Once the sauce thickens, remove it from heat and set it aside.
Step 2: Make the Cottage Cheese Filling
In a food processor, combine the cottage cheese, garlic powder, onion powder, Italian seasoning, dried basil, salt, and black pepper. Blend until the mixture is smooth but still slightly textured. Add the eggs and pulse until combined. Finally, pulse in the spinach until it is fully incorporated. If a food processor is unavailable, this step can be done by hand using a mixing bowl and spoon. The goal is to evenly distribute the flavors while maintaining some texture.
Step 3: Cook the Noodles
Bring a large pot of salted water to a boil and cook the lasagna noodles for about two minutes less than the package suggests for al dente. Since the noodles will continue cooking in the oven, slightly undercooking them ensures they do not become too soft. Drain the noodles and lay them flat on a clean surface to prevent sticking.
Step 4: Assemble the Lasagna
Preheat the oven to 350 degrees Fahrenheit. Lightly grease a baking dish to prevent sticking. Spread one and a half cups of sauce evenly on the bottom of the dish.
Begin layering the lasagna by placing four noodles lengthwise across the dish, overlapping slightly if necessary. Spread one-third of the cottage cheese mixture evenly over the noodles. Sprinkle with half a cup of shredded mozzarella cheese. Spoon one and a half cups of the meat sauce over the cheese. Repeat this process two more times, creating three full layers.
For the final layer, top the lasagna with the remaining mozzarella cheese and Parmesan cheese. Cover the dish with foil that has been sprayed with cooking spray to prevent sticking.
Step 5: Bake the Lasagna
Place the covered baking dish in the preheated oven and bake for 25 minutes. After this initial bake time, remove the foil and continue baking for an additional 25 minutes. This allows the cheese to melt and develop a golden-brown crust on top.
Once baked, remove the lasagna from the oven and let it cool for at least 15 minutes before slicing. This resting period allows the layers to set, making it easier to serve clean slices.
