Ingredients
For the Chicken Skewers
- 2 pounds boneless chicken tenders, chicken breasts, or chicken thighs (cut into approximately 3-inch pieces)
- 2 tablespoons olive oil
- 2 teaspoons paprika
- 1 teaspoon garlic powder

For the Garlic Parmesan Butter Sauce
- ½ cup (1 stick) unsalted butter
- 8 to 10 cloves garlic, finely minced
- ½ cup finely grated Parmesan cheese
- 1 tablespoon hot sauce (optional, for a subtle kick)
- 2 teaspoons crushed red pepper flakes (adjust to taste)

Preparation Notes
- Soak the skewers to avoid burning if you’re grilling or using an oven.
- Cut the chicken evenly to ensure each piece cooks at the same rate.

Instructions
1. Marinate the Chicken
- Place the chicken pieces in a large mixing bowl.
- Drizzle the olive oil over the chicken.
- Sprinkle the paprika, garlic powder, onion powder, salt, and black pepper on top.
- Toss everything together using clean hands or a spatula until all pieces are evenly coated.
- Cover the bowl and refrigerate for 15–30 minutes while you prep the garlic-parmesan sauce.
2. Prepare the Garlic Parmesan Butter Sauce
- In a small saucepan over low heat, melt the butter gently.
- Add the minced garlic and cook for 1–2 minutes until fragrant but not browned.
- Stir in the hot sauce (if using), red pepper flakes, and Parmesan cheese.
- Cook gently, stirring frequently, until the cheese melts into the butter mixture.
- Turn off the heat and stir in the chopped parsley.
- Separate about one-third of the sauce into a clean bowl to use for final basting. Set aside the remaining sauce for brushing during cooking.
3. Skewer the Chicken
- Remove the chicken from the fridge.
- Thread the chicken pieces tightly onto the soaked wooden skewers. Tightly packed chicken helps seal in moisture during cooking.
- Depending on your air fryer or oven size, trim the ends of the skewers to fit, if needed.
4. Cook the Chicken Skewers
Air Fryer Method (Recommended)
- Preheat the air fryer to 400°F.
- Place 2–3 skewers into the basket, spaced slightly apart.
- Cook for 5 minutes.
- Flip the skewers and brush generously with the garlic-parmesan butter sauce.
- Cook for another 2 minutes.
- Flip again, baste with more sauce, and cook for an additional 5–6 minutes until the internal temperature reaches 165°F.
- Remove from the air fryer and brush with the reserved clean sauce.
Oven Method
- Preheat the oven to 450°F.
- Line a baking sheet with foil or parchment and lightly grease it.
- Place the skewers on the tray, leaving space between each one.
- Bake for 14 minutes, turning once halfway through.
- Brush the skewers with garlic-parmesan sauce during the final 5 minutes of baking.
- For a crispy finish, broil on high for 2–3 minutes.
- Remove from oven and brush with the reserved clean sauce.
Grill Method
- Preheat a grill to medium-high heat.
- Lightly oil the grill grates.
- Grill the skewers for about 5–6 minutes per side, turning occasionally and basting with sauce throughout.
- Once cooked through, remove from the grill and brush with the reserved sauce.
Notes
- Soaking wooden skewers prevents them from catching fire, especially important for oven and grill use.
- Keep the chicken pieces uniform so they cook evenly without overcooking some pieces while undercooking others.
- Use a thermometer to check doneness. Chicken should always reach an internal temperature of 165°F (74°C).
- Separate your sauces: Always keep one portion of the garlic-parmesan sauce untouched by raw chicken to use safely after cooking.
- Fresh herbs and cheese elevate the dish. Avoid pre-shredded cheese if possible—it doesn’t melt as smoothly.
