  • 1 shallot, minced
  • 1 lb medium shrimp, peeled and deveined
  • 2 tsp lemon zest
  • 2 tbsp fresh parsley, chopped

Instructions

Step 1: Prepare the Zucchini Noodles

1️⃣ Melt 1 tablespoon butter in a large skillet over medium heat.
2️⃣ Add 2 cloves minced garlic and sauté until fragrant (about 1 minute).
3️⃣ Stir in zucchini noodles and cook until just tender (2-3 minutes).
4️⃣ Season with salt and pepper, then set aside and keep warm.

🔹 Pro Tip: Zucchini releases a lot of water when cooked. To prevent soggy noodles, pat them dry with a paper towel before adding them to the pan. You can also lightly salt them beforehand and let them sit for a few minutes to draw out excess moisture.
