- 100g cream cheese (softened)
- 100ml heavy cream (whipped to soft peaks)
- 50g powdered sugar
- 1 teaspoon vanilla extract
For the Decoration:
- Chocolate almonds or chocolate-covered cereals (for pinecone “scales”)
- Powdered sugar (for a snowy effect)
- Fresh rosemary or mint leaves (optional, for garnish)
Instructions
1. Prepare the Base Mixture
- Crush the Biscuits: Place digestive biscuits or graham crackers in a food processor and blitz until they form fine crumbs. Alternatively, place them in a resealable bag and crush them with a rolling pin.
- Combine Ingredients: In a mixing bowl, combine the crushed biscuits, melted butter, cocoa powder, and honey. Mix until the texture resembles wet sand.
2. Shape the Cake Base
- Form the Pinecone Shape: On a piece of parchment paper, mound the biscuit mixture into a rough cone shape. Use your hands to press and smooth the mixture, forming the base of the pinecone. Wrap it in cling film and refrigerate for 30 minutes to set.
3. Prepare the Filling
- Melt the Chocolate: Heat the dark chocolate in a microwave or double boiler until smooth. Allow it to cool slightly.
- Combine Filling Ingredients: In a bowl, beat the cream cheese and powdered sugar until smooth. Add the melted chocolate and vanilla extract, mixing thoroughly. Fold in the whipped cream for a lighter texture.
4. Assemble the Pinecone Cake
- Apply the Filling: Remove the chilled base from the fridge and spread the chocolate filling evenly over the surface, using an offset spatula to create a smooth layer.
- Add the Scales: Starting from the bottom, press chocolate almonds or chocolate-covered cereals into the filling, overlapping slightly to mimic pinecone scales. Work your way up to the tip.
- Chill the Cake: Refrigerate the assembled cake for at least 2 hours or until firm.
5. Add Finishing Touches
- Dust with Powdered Sugar: Use a fine sieve to dust powdered sugar over the cake for a snowy effect.
- Garnish: Arrange fresh rosemary or mint leaves around the base for a festive touch.
