- 1 package of sugar cookie mix (17.5 oz, such as Betty Crocker)
- ½ cup unsalted butter, melted
- 1 egg
- 6 strawberry Pop-Tarts
- 2 cups powdered sugar
- ¼ cup lemon juice
- Red sugar sprinkles (optional)
Instructions
- Preheat and Prepare
Preheat your oven to 350°F. Line a baking sheet with parchment paper to prevent the cookies from sticking. - Make the Cookie Dough
In a mixing bowl, combine the sugar cookie mix, melted butter, and egg. Stir until a soft dough forms. The dough should be slightly sticky but firm enough to hold its shape. - Prepare the Pop-Tarts
Take four of the Pop-Tarts and place them back to back so the frosting sides are on the outside. Cut them into 8 small pieces. Repeat this step until you have 16 pieces in total. - Assemble the Cookies
Use a 1-tablespoon cookie scoop to portion out the dough. You will need two scoops per cookie.
Take one scoop of dough and place two pieces of the chopped Pop-Tarts on top. Then, place another scoop of dough over the Pop-Tart pieces and press the edges together, sealing them inside. Roll the dough into a smooth ball. - Bake the Cookies
Place the cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 9-10 minutes, or until the edges start to turn a light golden brown.
Let the cookies cool completely on the baking sheet before adding the glaze. - Make the Glaze
In a small bowl, mix the powdered sugar and lemon juice until smooth. If the glaze is too thick, add a teaspoon of lemon juice or water at a time until it reaches the desired consistency. - Decorate the Cookies
Spoon the glaze over each cooled cookie, allowing it to slightly drip down the sides.
Take the remaining 1-2 Pop-Tarts and break them into small crumbles. Sprinkle these crumbles over the cookies, followed by red sugar sprinkles if desired. - Let Set and Enjoy
Allow the glaze to set for about 10 minutes before serving. Enjoy these cookies fresh, or store them for later.

How to Know When the Cookies Are Done
