Ingredients
For the Puff Pastry Tarts:
- 1 sheet store-bought puff pastry, thawed
- 1 egg, beaten (for egg wash)
- 1 tablespoon water
- 1 tablespoon granulated sugar (optional, for extra sweetness)
For the Lemon Curd Whipped Cream:
- 1 cup heavy whipping cream, cold
- 2 tablespoons powdered sugar
- ½ cup lemon curd (store-bought or homemade)
- 1 teaspoon vanilla extract
For the Toppings:
- 1 cup mixed fresh fruit (strawberries, blueberries, raspberries, kiwi, or mango)
- 1 tablespoon honey or apricot jam (optional, for glazing)
- 1 teaspoon water (to thin the glaze, if using)
Instructions
1. Prepare the Puff Pastry
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Lightly flour a clean work surface and roll out the thawed puff pastry sheet to smooth out any creases.
- Using a sharp knife or a pastry cutter, cut the pastry into equal-sized squares or circles, depending on the desired shape of your tarts.
- Transfer the pastry pieces to the prepared baking sheet, leaving space between each piece.
2. Create the Pastry Border
- Lightly score a border around each pastry piece, about ½ inch from the edges. Be careful not to cut all the way through. This allows the edges to puff up while keeping the center slightly flatter.
- Prick the center of each piece with a fork to prevent it from rising too much.
3. Apply the Egg Wash and Bake
- In a small bowl, whisk together the beaten egg and water. Brush this mixture lightly over the pastry edges for a golden, glossy finish.
- Sprinkle a little granulated sugar over the top if a slightly sweet crust is desired.
- Bake in the preheated oven for 12–15 minutes, or until the pastry is golden brown and puffed.
- Remove from the oven and allow to cool completely before adding toppings.
4. Prepare the Lemon Curd Whipped Cream
- In a mixing bowl, combine the cold heavy whipping cream, powdered sugar, and vanilla extract.
- Using a hand mixer or a stand mixer, whip the mixture on medium speed until soft peaks form.
- Gently fold in the lemon curd until fully incorporated. Avoid over-mixing to maintain a light texture.
- Refrigerate until ready to use.
5. Assemble the Tarts
- Once the puff pastry squares have cooled, press down the center slightly to create a space for the filling.
- Spoon or pipe the lemon curd whipped cream into the center of each tart.
- Arrange fresh fruit on top in a decorative pattern.
6. Add a Finishing Touch
- For extra shine, mix honey or apricot jam with a small amount of water and lightly brush over the fruit using a pastry brush.
- Serve immediately or refrigerate until ready to enjoy.
Notes
- Handling Puff Pastry: Puff pastry is easiest to work with when it is chilled but not frozen. If it becomes too soft, place it back in the refrigerator for a few minutes before continuing.
- Preventing Soggy Pastry: If preparing ahead of time, store the baked pastry separately from the filling and assemble just before serving to keep the crust crisp.
- Whipping Cream Consistency: To achieve stable whipped cream, ensure the cream is very cold before whipping. Using a chilled bowl also helps.
- Customizing the Flavor: The lemon curd adds tanginess, but for a different flavor, try mixing the whipped cream with fruit puree or a touch of cocoa powder.
