50 grams (½ cup) parmesan cheese, grated
50 grams (¾ cup) bread crumbs
1 tablespoon fresh parsley, chopped

Instructions

1. Cook the Macaroni

  • Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package instructions until al dente.
  • Drain the pasta and set it aside.

2. Prepare the Cheese Sauce

  • In a large saucepan, melt the butter over medium heat.
  • Add the flour, whisking constantly for about a minute to form a smooth roux.
  • Gradually pour in the milk, continuing to whisk to prevent lumps. Cook for approximately 5 minutes until the sauce thickens.
  • Stir in the garlic powder and mixed spice for an aromatic kick.

3. Incorporate the Cheese

  • Remove the saucepan from the heat. Gradually add the cheddar and parmesan cheeses, stirring until they melt into a velvety sauce.
  • Season the sauce with salt and pepper to taste.

4. Combine Pasta and Sauce

  • Add the cooked macaroni to the cheese sauce. Toss until every piece of pasta is generously coated in the creamy goodness.

5. Prepare the Topping

  • In a small bowl, mix the breadcrumbs with a drizzle of melted butter (optional for added crunch).
  • Evenly sprinkle the breadcrumb mixture over the mac and cheese.
