Ingredients
- 1 pound (450g) ground beef
- 1 cup long-grain white rice or jasmine rice
- 2 cups chicken broth
- 1 onion, finely chopped
- 1 bell pepper, finely chopped
- 2 celery stalks, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- ½ teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 2 green onions, thinly sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Cook the Rice
In a medium saucepan, bring the chicken broth to a boil. Add the rinsed rice, reduce the heat to low, cover, and simmer for 15 to 20 minutes, or until the rice is tender and the liquid is fully absorbed. Remove from heat and let it sit covered for five minutes. Fluff with a fork to separate the grains.
Step 2: Brown the Ground Beef
In a large skillet or Dutch oven, heat the vegetable oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until it is browned and no longer pink. This should take about five to seven minutes. Drain any excess grease if necessary.
Step 3: Sauté the Vegetables
Add the chopped onion, bell pepper, celery, and minced garlic to the skillet with the browned beef. Stir and cook for about five minutes, or until the vegetables soften and become fragrant.
Step 4: Season the Mixture
Sprinkle in the paprika, dried thyme, cayenne pepper, salt, and black pepper. Stir well to coat the beef and vegetables in the spices. Let the mixture cook for another one to two minutes to deepen the flavors.
Step 5: Combine the Rice
Add the cooked rice to the skillet, stirring to evenly distribute the seasoned beef and vegetables throughout. Cook for another two to three minutes over low heat to allow the flavors to meld together.
Step 6: Adjust Seasoning and Serve
Taste the dirty rice and adjust the seasoning if needed. If you prefer more heat, add a pinch of extra cayenne. If the flavors need more balance, a dash of salt or black pepper can enhance the dish.
Garnish with sliced green onions and chopped parsley for a fresh finish. Serve hot as a main dish or side.
Notes
- How to Tell if the Rice is Cooked: Properly cooked rice should be tender but not mushy. If the rice is still hard after the suggested cooking time, add a splash of water, cover, and let it steam for a few more minutes.
- Prevent Overcooking Vegetables: To keep the vegetables from becoming too soft, cook them just until they start to turn translucent. They should retain some texture for the best taste.
- Adjusting the Spice Level: If you prefer a milder dish, reduce the cayenne pepper or omit it entirely. For a smoky kick, try adding a pinch of smoked paprika instead.
- Making it Ahead of Time: Dirty rice can be made in advance and stored in the refrigerator for up to three days. Reheat it in a skillet with a splash of broth or water to keep it from drying out.
