Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper (optional)
- 2 egg whites, lightly beaten
- 1½ cups all-purpose flour
- Vegetable oil, for frying
For the Caesar Slaw:
- 2 cups shredded romaine lettuce
- ¾ cup Caesar dressing (store-bought or homemade)
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon lemon juice
- Black pepper, to taste
For the Sandwich:
- 2 large buttery croissants, halved horizontally
- Extra Parmesan for topping
- Optional additions: tomato slices, avocado, red onion, cucumber
Instructions
1. Prepare and Season the Chicken
Start by trimming any fat from the chicken breasts. Place them on a clean surface and pat dry with paper towels. Dry chicken helps the breading stick better.
In a small bowl, mix together the garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper. Generously season both sides of the chicken breasts with this spice mix.
If the chicken breasts are thick, you can butterfly them or pound them to an even thickness using a meat mallet. This ensures quicker, more even cooking.
2. Bread the Chicken
Set up two shallow bowls—one with the beaten egg whites, and another with the flour. Dip each chicken breast first into the egg white to fully coat, then dredge it in the flour, pressing it in to create a thick, even coating. Shake off any excess.
Place the breaded chicken on a plate and let it rest for about 5 minutes while you heat the oil. Resting helps the breading adhere better during frying.
3. Fry Until Golden and Crispy
In a heavy skillet, pour in vegetable oil until it’s about ½ inch deep. Heat over medium-high heat until shimmering. To test if the oil is ready, sprinkle a pinch of flour—if it sizzles immediately, you’re good to go.
Carefully place the chicken in the hot oil. Don’t overcrowd the pan—cook in batches if necessary. Fry for about 3–5 minutes per side, depending on thickness, until each side is golden brown and crispy. The internal temperature should reach 165°F (74°C).
Remove the chicken from the oil and let it drain on a paper towel-lined plate.
4. Prepare the Caesar Slaw
While the chicken is resting, make the Caesar slaw. In a mixing bowl, combine the shredded romaine lettuce, Caesar dressing, grated Parmesan, lemon juice, and a dash of black pepper. Mix gently to coat all the lettuce without crushing it.
This slaw adds cool contrast to the hot chicken and delivers that unmistakable Caesar flavor.
5. Toast the Croissants
Slice the croissants in half lengthwise. Lightly toast the inside of each half in a dry skillet or toaster oven until golden and crisp. This step not only enhances flavor but also prevents the croissant from becoming soggy once assembled.
6. Assemble the Sandwiches
Lay the bottom half of each croissant on a serving plate. Add a generous spoonful of Caesar slaw, followed by slices of crispy chicken. If desired, add extra toppings such as sliced tomato, avocado, or thinly sliced red onion.
Sprinkle a little more grated Parmesan on top of the chicken for added sharpness.
Finish by placing the top half of the croissant over everything. Press down gently and serve immediately while warm.
Notes
- Avoid sogginess by toasting your croissants and draining the chicken well. A few extra seconds on a paper towel can make a big difference.
- Use a thermometer to check the chicken is fully cooked. Undercooked chicken is unsafe, while overcooked chicken is dry.
- Don’t skip the resting step after breading the chicken—it helps the coating stick during frying and prevents it from falling apart in the oil.
- Customize your Caesar dressing if making homemade. Use mayonnaise, grated garlic, lemon juice, Dijon mustard, olive oil, and grated Parmesan for a quick, delicious option.
- Consider air frying if you want a lighter version. Brush breaded chicken with a little oil and cook at 375°F (190°C) in an air fryer for about 12–15 minutes, flipping halfway.
