  • ¾ cup boiling water
  • ½ cup cold water

Preparation Notes:

  • Make sure the cream cheese is softened to room temperature for smooth mixing.
  • Use fresh orange zest to maximize the bright citrus flavor.
  • A 9-inch springform pan works best for this recipe to easily remove the cheesecake once set.

Instructions

1. Prepare the Crust

  • In a medium-sized bowl, combine the graham cracker crumbs and granulated sugar.

  • Pour the melted butter over the mixture and stir until all crumbs are evenly coated and the mixture resembles wet sand.

  • Press the crumb mixture firmly into the bottom of the springform pan, ensuring an even, compact layer. Use the bottom of a glass or measuring cup to press down firmly.

  • Place the crust in the refrigerator to chill while you prepare the filling. This will help it set properly.

2. Prepare the Orange Gelatin

  • In a heatproof bowl, dissolve the orange-flavored gelatin powder into ¾ cup of boiling water. Stir well until completely dissolved.

  • Add the cold water to the gelatin mixture and stir again.

  • Set aside to cool slightly but not to set. The gelatin should be warm but not hot when mixed into the cream cheese mixture.

3. Prepare the Cream Cheese Mixture

  • In a large mixing bowl, beat the softened cream cheese using a hand mixer or stand mixer on medium speed until smooth and creamy.

  • Gradually add the powdered sugar and continue beating until fully combined and smooth.

  • Add the vanilla extract and orange zest. Mix to incorporate evenly.

4. Whip the Cream

  • In a separate chilled bowl, whip the heavy cream on medium-high speed until stiff peaks form. This means when you lift the beaters, the cream holds its shape firmly.

  • Gently fold the whipped cream into the cream cheese mixture using a spatula. Be careful not to deflate the whipped cream; fold until just combined for a light and airy texture.

5. Combine Gelatin with Cream Cheese Mixture

  • Slowly pour the slightly cooled orange gelatin into the cream cheese mixture while gently folding to combine. Make sure the gelatin is not too hot to avoid curdling the cream cheese.

  • Mix until the orange color is evenly distributed through the cream cheese mixture.

6. Create the Vanilla Swirl

  • Remove half of the orange gelatin cream cheese mixture and place it in a separate bowl.

  • In the remaining half, add a little extra vanilla extract or a few tablespoons of heavy cream (whipped slightly) to intensify the vanilla flavor and lighten the color.

  • Alternate spooning the orange mixture and the vanilla mixture into the prepared crust in the springform pan to create a swirl pattern.

  • Use a skewer or a knife to gently swirl the two mixtures together, creating a marbled effect without overmixing.

7. Chill and Set

  • Cover the cheesecake loosely with plastic wrap or foil.

  • Refrigerate for at least 4 hours, or preferably overnight, until fully set and firm to the touch.

  • Avoid freezing as this could alter the texture of the no-bake cheesecake.

8. Serve

  • Before serving, release the cheesecake from the springform pan.

  • Garnish with whipped cream, fresh orange slices, and a sprinkle of orange zest for an elegant presentation.

Notes

  • Always use room temperature cream cheese for a smoother filling and easier mixing. Cold cream cheese will cause lumps.
  • Be careful with the gelatin temperature. Pouring hot gelatin into the cream cheese will curdle the mixture, so let it cool slightly before combining.
  • When folding whipped cream, use gentle, sweeping motions to keep the mixture light and fluffy. Overmixing will result in a dense texture.
  • If you don’t have a springform pan, line a regular 9-inch cake pan with parchment paper for easier removal.
