Pasta and Protein:
- 8 oz penne pasta
- 2 boneless, skinless chicken breasts, sliced into strips
- 1 tbsp olive oil (for cooking chicken)
Vegetables:
- 1 cup mushrooms, sliced
- 1 cup asparagus, cut into 2-inch pieces
- 2 cloves garlic, minced
Creamy Sauce:
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp red pepper flakes (optional for a little heat)
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until it’s al dente. This usually takes around 9–11 minutes.
- Once the pasta is cooked, drain it and set it aside. You’ll use it later in the creamy sauce.
- Prepare the Chicken:
- While the pasta is cooking, season the sliced chicken breasts with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken slices and cook for about 5–7 minutes, turning them halfway through until they are golden brown and fully cooked.
- Remove the chicken from the skillet and set it aside on a plate.
- Sauté the Vegetables:
- In the same skillet, add a little more olive oil if needed and turn the heat to medium.
- Add the sliced mushrooms to the skillet and sauté them for 5–7 minutes until they have released their moisture and become golden brown.
- Add the asparagus and cook for another 2–3 minutes until slightly tender but still crisp.
- Stir in the minced garlic and sauté for 30 seconds until fragrant, making sure not to burn it.
- Make the Cream Sauce:
- Once the vegetables are tender and fragrant, reduce the heat to low.
- Pour in the chicken broth, scraping up any bits of chicken or vegetables from the bottom of the skillet. This adds extra flavor to the sauce.
- Stir in the heavy cream and Parmesan cheese. Allow the cheese to melt and the sauce to thicken, which should take about 3–5 minutes.
- Season with Italian seasoning, salt, black pepper, and red pepper flakes (if using). Stir everything together and let the sauce simmer for another 2–3 minutes until it reaches a creamy consistency.
- Combine Everything:
- Slice the cooked chicken into strips, if not already done, and add it back into the skillet along with the drained penne pasta.
- Toss everything together, making sure the pasta, chicken, and vegetables are evenly coated with the creamy sauce.
- Continue cooking for 2–3 minutes to ensure everything is heated through and well combined.

- Cooking Pasta Perfectly:
- Always cook pasta in a large pot of salted water to enhance its flavor. It’s a simple step but makes a big difference! Don’t overcook it; aim for al dente pasta, which is firm to the bite.
- Cooking Chicken:
- Slice the chicken into even strips to ensure it cooks quickly and evenly. Overcrowding the pan can cause the chicken to steam rather than sear, so cook in batches if necessary.
- For a quicker cook time, you can flatten the chicken breasts with a meat mallet before slicing.
- Sautéing Vegetables:
- For the best flavor, allow the mushrooms to cook long enough to brown. This caramelization adds a rich, savory taste to the dish.
- When cooking the asparagus, keep a close eye on it. You want it to remain slightly crisp for texture, not mushy.
