Ingredients
- 6 slices rye bread – Rye bread gives this melt its signature flavor, but if you can’t find it, you can use whole wheat or white bread.

- 3 tablespoons mayonnaise – Mayonnaise adds creaminess to the sauce and enhances the flavor.

- 1 tablespoon real bacon bits – While bacon bits are traditionally used in a patty melt, you can substitute them with cooked chicken or beef bacon bits for a non-pork option.
- 1 teaspoon sweet relish – Sweet relish brings in a hint of sweetness and tanginess.
- 1 teaspoon white sugar – A touch of sugar will balance the tartness of the relish and ketchup.
- 6 slices cheddar cheese – Cheddar melts beautifully and has a sharp, creamy taste.
- 6 slices Provolone cheese – Provolone adds a mild, smooth flavor that complements the cheddar.
Instructions
Step 1: Butter the bread.
Take your rye bread slices and butter one side of each slice. You’ll want to butter the bread generously, as this will ensure the bread crisps up nicely and adds flavor. Once you’ve buttered all the slices, set them aside.
Step 2: Prepare the beef mixture.
In a mixing bowl, combine your ground beef, black pepper, salt, and onion powder. Mix everything together with your hands or a spoon until the seasonings are evenly distributed throughout the beef. Be careful not to overmix, as this can make the patties tough.
Step 3: Shape the patties.
Divide the seasoned beef mixture into three equal portions. Roll each portion into a ball and then flatten it to form a patty. Try to shape the patties to match the size of the bread slices so that they fit nicely once assembled.
Step 4: Preheat the skillet.
Place a nonstick skillet over medium-high heat and let it warm up for a couple of minutes. You’ll want the skillet hot enough to sear the patties but not too hot that they burn quickly.
Step 5: Cook the patties.
Place the beef patties into the skillet. Let them cook for about 2-3 minutes on one side, then flip them carefully using a spatula. After flipping, cook the other side for an additional 2-3 minutes. Once both sides are browned, reduce the heat to low and cook for another 5 minutes to ensure the patties are cooked through. The internal temperature of the patties should reach 160°F (71°C). If you’re unsure, using a meat thermometer is an easy way to check.
Step 6: Make the sauce.
While the patties are cooking, take a small bowl and mix together the mayonnaise, ketchup, bacon bits (or beef/chicken bacon), relish, and sugar. Stir the ingredients until well-combined. This sauce is what brings the whole sandwich together, adding both creaminess and sweetness with a touch of tang.
Step 7: Toast the bread.
In a separate skillet, heat it to medium-low heat. Place a slice of buttered bread in the skillet (butter-side down). Top it with two slices of cheddar cheese, followed by a beef patty, and then two slices of Provolone cheese. Take another slice of buttered bread and spread the sauce on the unbuttered side. Place this slice on top of the sandwich, sauce-side down. Grill the sandwich for about 2-3 minutes on each side, or until the bread is golden brown and the cheese has melted. Repeat the process for the remaining two sandwiches.
Step 8: Serve and enjoy!
Once all three patty melts are grilled to perfection, remove them from the skillet. Let them cool for a minute, slice them in half, and serve. Enjoy the crispy bread, melty cheese, and savory beef patty with your homemade sauce.

- Don’t rush the cooking process. While it can be tempting to cook the patties over high heat to speed things up, doing so may result in burnt outsides and raw centers. Take your time to cook the patties thoroughly on medium heat.
- Use a meat thermometer for accuracy. Checking the internal temperature of your patties with a thermometer can take the guesswork out of cooking. If you don’t have one, you can also cut into the patty to make sure there’s no pink inside.
- Monitor the bread carefully. Buttering the bread is key to getting that crispy, golden texture. Be careful not to burn the bread, especially when grilling. If your heat is too high, it might brown too quickly before the cheese melts.
- Customize the sauce. The sauce is incredibly versatile. Feel free to adjust the ingredients based on your taste. For example, you can add a little hot sauce for extra heat or swap out the sweet relish for dill relish if you prefer a more tangy flavor.
- Avoid overcooking the bread. When grilling, pay attention to how quickly the bread is browning. You don’t want it too dark – the goal is a crispy, golden exterior without it being overly crunchy.
