  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

  • Fettuccine (12 ounces): The ideal pasta for soaking up the creamy sauce, though linguine or penne can also work.
  • Shrimp (1 pound): Medium-sized, peeled, and deveined shrimp are convenient and cook quickly.
  • Cajun Creole Seasoning (1 ½ teaspoons): A smoky blend of spices that forms the backbone of the dish’s flavor.
  • Granulated Garlic (½ teaspoon): Enhances the savory notes.
  • Cayenne Pepper (Pinch): Optional for those who enjoy an extra kick of heat.
  • Salt: To taste, balancing the flavors.
  • Avocado or Olive Oil: For searing the shrimp and sautéing the aromatics.
  • Unsalted Butter (1 tablespoon): Adds richness to the sauce.
  • Onion (1 small, finely diced): Provides a subtle sweetness and depth.
  • Roasted Red Peppers (½ cup, finely diced): Sweet and smoky, these add a vibrant color and flavor.
  • Garlic (6 cloves, minced): Aromatic and essential for flavor.
  • Red Pepper Flakes (Pinch): Optional, for those who love a bit more spice.
  • Tomato Paste (1 tablespoon): Intensifies the tomato flavor in the sauce.
  • Fire-Roasted Crushed Tomatoes (1 can, 14.5 ounces): Adds a smoky, tangy element to the dish.
  • Chicken Broth (½ cup): Provides a savory base for the sauce.
  • Heavy Cream (½ cup): Brings creaminess and balances the spices.
  • Fresh Parsley (1 tablespoon, chopped): Adds a fresh, herbaceous finish.

Instructions

  • Prep the Ingredients
Gather all your ingredients and prep them according to the list. Peel and devein the shrimp if needed, dice the vegetables, and measure out the spices and liquids. Cooking goes much smoother when everything is ready to go.
  • Cook the Fettuccine
Bring a large pot of salted water to a boil and cook the fettuccine according to the package instructions until al dente. Drain the pasta, reserving a cup of pasta water in case you need to adjust the sauce consistency. Keep the pasta warm.
  • Season and Sear the Shrimp
In a medium bowl, toss the shrimp with Cajun Creole seasoning, granulated garlic, cayenne pepper (if using), and a drizzle of avocado or olive oil. Heat a large cast-iron skillet over medium-high heat and add a couple of tablespoons of oil. Once hot, add the shrimp in a single layer. Cook for about 2 minutes on one side until golden and slightly crispy. Flip and cook for another minute. Remove the shrimp from the skillet and set aside.
  • Prepare the Aromatics
In the same skillet, add a tablespoon of unsalted butter and a bit more oil if needed. Toss in the diced onion and roasted red peppers. Sauté for 2–3 minutes until softened and lightly golden. Add the minced garlic and red pepper flakes (if using), and cook for 30 seconds until fragrant.
  • Build the Sauce
Stir in the tomato paste and cook for a minute to caramelize slightly. Add the fire-roasted crushed tomatoes and chicken broth, stirring to combine. Bring the mixture to a gentle simmer and cook for 3–4 minutes to meld the flavors.
  • Incorporate the Cream
Reduce the heat to low and pour in the heavy cream. Stir gently to create a smooth, creamy sauce. Let it simmer for another couple of minutes until it thickens slightly. Taste and adjust the seasoning with salt or more Cajun seasoning as needed.
  • Combine the Pasta and Sauce
Add the cooked fettuccine to the skillet, tossing it gently to coat the pasta in the creamy sauce. Return half of the shrimp to the skillet, mixing them into the pasta. If the sauce feels too thick, add a splash of reserved pasta water to loosen it.
  • Garnish and Serve
Sprinkle the dish with fresh parsley and top with the remaining shrimp for presentation. Serve the Cajun Shrimp Pasta straight from the skillet or transfer it to a serving dish for a more elegant presentation.

Notes

  • Substitute Pasta: While fettuccine is a classic choice, linguine, spaghetti, or even penne can work well. Whole wheat or gluten-free pasta is also an option for dietary preferences.
  • Adjust the Spice: For a milder version, omit the cayenne pepper and red pepper flakes. If you love heat, add more Cajun seasoning or a splash of hot sauce.
  • Swap the Protein: If shrimp isn’t your favorite, this recipe works wonderfully with chicken, scallops, or even a mix of seafood like mussels and clams.
  • Make It Lighter: Substitute half and half for the heavy cream, or use coconut milk for a dairy-free alternative.
  • Add Veggies: Boost the nutrition by adding spinach, kale, or diced zucchini to the sauce. The vegetables will cook down and blend seamlessly with the flavors.
  • Cheesy Upgrade: Sprinkle freshly grated Parmesan cheese over the pasta before serving for an extra layer of richness.
