- Dry Ingredients:
- 1 ½ cups of black cocoa powder

- Wet Ingredients:
- 1 ½ cups buttermilk, at room temperature
- 1 cup vegetable oil
- 1 ½ cups granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
Frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans to prevent sticking.
- Combine Dry Ingredients: In a large mixing bowl, sift together 1 ½ cups of black cocoa powder, 2 cups of all-purpose flour, 1 teaspoon baking soda, ½ teaspoon baking powder, and ½ teaspoon salt. Set aside.
- Mix Wet Ingredients: In another large bowl, combine 1 ½ cups of buttermilk, 1 cup vegetable oil, and 1 ½ cups of granulated sugar. Add in 2 large eggs, one at a time, mixing thoroughly after each addition. Stir in 1 teaspoon of vanilla extract and 1 teaspoon of white vinegar.
- Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, mixing gently until just combined. Avoid over-mixing, as this can lead to a dense cake texture.
- Pour and Bake: Divide the batter evenly between the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in their pans for about 10 minutes, then turn them out onto a wire rack to cool completely.
- Prepare the Frosting: In a large bowl, beat together 8 oz of softened cream cheese and ½ cup of softened unsalted butter until smooth and creamy. Gradually add 4 cups of powdered sugar, mixing well after each addition. Stir in 1 teaspoon of vanilla extract and continue beating until the frosting is light and fluffy.
- Assemble the Cake: Place one cooled cake layer on a serving plate and spread a thick layer of cream cheese frosting on top. Place the second layer on top and frost the entire cake, using an offset spatula for a smooth finish.
